The other day I was craving pancakes. Something I rarely make at home, but love to order for the table at brunch to share. I just HAD to have them. You know that feeling, right? I decided to whip up a batch since I had all of the ingredients. But since I’m mostly dairy-free, I had no milk. As in, I’m lactose intolerant to certain things and straight milk is one of those HARD NO’s for me. However, I did have oatmilk! A delicious plant-based alternative to milk.
I order oatmilk a lot now while at coffee shops. I remember my first oatmilk experience in Asheville. It was seriously the BEST latte I ever had. Ever since, I buy Planet Oat Oatmilk to have it on hand for what I’d normally use milk for – lattes, oatmeal or baking. Since I’m semi-lactose intolerant (only certain things disagree with me and straight milk is 100% one of those things) I’ve been using milk alternatives for years. Oatmilk has been my newest addition. The thing I love about Planet Oat Oatmilk is that it’s a delicious and also nutritious milk alternative. It’s rich, creamy and naturally sweet too. Plus, it’s free of soy, nuts and gluten!
The only thing is, I had never tried it with pancakes. I didn’t think anything of it when I made them until the first bite. Holy cow they were SO good. Oatmilk is a bit sweeter than your average almond or soy milk. It has a richness to it that other dairy alternatives just don’t have. Plus, I had the Vanilla flavor on hand so it had an additional level of vanilla-infused throughout the pancake. It was SO good. I will never make pancakes again without it. Here’s how I made mine.
Oatmilk Pancake Recipe
For The Pancakes
- 1 cups all-purpose flour
- 1 cup Planet Oat Oatmilk (Extra Creamy or Vanilla flavor)
- 2 teaspoons baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- pinch of salt
- 2 eggs
- 6 tbsp butter, melted
- 2 tbsp granulated sugar
For The Berry Sauce
- 1 cup of your choice of berries (fresh or frozen)
- 1 tbsp coconut oil
Recipe Note: This recipe is similar to the pancakes at my favorite brunch spot, Superica. The first time I made them they were insanely fluffy and thick. The second time, they weren’t. I can’t figure out what happened, but either way they were all delicious.
Preheat a griddle to 375 degrees, or a large pan over medium heat. Then, add your dry ingredients to a bowl and whisk.
Melt your butter. Then whisk your eggs. Combine with your Planet Oat Oatmilk.
Combine your wet into the dry ingredients and mix until just combined. Do not overmix! Lumps are good!
Pour 1/4 cup of batter onto you griddle pan or frying pan (use butter if it’s not non-stick). Once you see lots of bubbles (at least 3 minutes) then flip. Let cook another 2-3 minutes.
For The Berry Sauce
This berry sauce is SO simple and a great way to add sweetness to your pancakes without a ton of syrup. I use much less syrup on my pancakes when I whip this up and it takes just seconds to put together and a few minutes to cook. Just add your coconut oil and berries to a pan and heat until bubbly. Stir occasionally.
You can serve these up alongside a latte made with Planet Oat Oatmilk too if you like. Or if you want a little extra indulgence, they also come in several other flavors like chocolate.
