Fun fact, one of my all time favorite desserts is key lime pie. I just love the tartness, the fresh zip of key lime and the graham cracker crust. Plus, for someone who’s not usually a whipped cream person, this is the one time I absolutely think it’s necessary.  While packing up a picnic a few weeks back, I wanted a really easy dessert to make that was also perfectly served individually. Plus, with summer being so hot and the last thing I want to do is turn my oven on more than I need to. Therefor, a no bake dessert was on my mind. Insert today’s post, the best no bake key lime pie recipe.

While browsing recipes to try to nail one down for this, I noticed that they were so much easier than I expected. Seriously just a handful of ingredients and you’ve got perfect little no bake key lime pies. I ended up using this recipe from Million Moments.  I just had to buy a handful of ingredients and I was ready to go to whip this up. Literally, all you do is whip it up. You basically put all of your ingredients into a mixer and whip it up. Then layer it with graham crackers (the recipe calls to add butter, but I didn’t even bother with that) and layers of whipped cream. I made fresh whipped cream which is always better than anything else in the store, period. You can even add some key lime zest to the whipped cream for additional flavor.

No Bake Key Lime Pies
Servings: 4
  • 1 package of graham crackers
  • 2 tbsp butter
  • 1 8oz package of cream cheese (softened)
  • 1/2 can condensed milk around 7oz
  • 1/2 cup plain or vanilla Greek yogurt
  • key lime juice to taste – I added several tablespoons
  • whipped topping - I made homemade with heavy whipping cream bit of sugar and vanilla
  • limes to garnish
  • 4 small glass jars
  1. Add cream cheese, condensed milk and yogurt to a stand mixer. Whip for about 5 minutes until smooth.

Add key lime to taste. I like to do this after it's whipped so it makes it easier to taste how tart you want it.

Depending on if you use fresh or bottled key lime, your filling may or may not turn very green. I added 1 drop (just one!) of green food coloring to the mix to give it a key lime color. Otherwise it was basically white.

Crush graham crackers and add melted butter (optional, I made mine without them and it was just fine).

Layer graham cracker mixture and filling to mason jars and top with whipped topping and lime zest or wedge.
