My 10 Minute Shrimp Fried Rice Dinner Recipe

My Go To 10 Minute Healthy Shrimp Fried Rice Dinner Recipe

This recipe is one I’ve shared many times on my Instagram Stories. It’s truly my go to quick dinner as in it takes 10 minutes to make. My favorite part about this recipe is that I can keep the ingredients in my freezer making it a great go-to when I have nothing to cook. This recipe is easy to change up for low-carb days too. Just swap out the fried rice with fried vegetable cauliflower rice instead. Both available at Trader Joe’s.

The method is super easy and one that’s great for really any stir-fry. You can swap out the meat for a protein of your choice, add in different veggies and so on. Just having the right ingredients for the stir fry is all you need to really turn any veggie, protein and rice combo into a delicious asian inspired dish.

Healthy Shrimp Fried Rice Recipe

This easy healthy shrimp fried rice recipe will be your new weekday go to for quick and healthy dinners. It’s super easy to whip up and you can easily swap out the protein for whatever you like. I prefer shrimp since they stay in the freezer well and quickly defrost. But you can always use chicken, tofu, beef or pork. Whatever your heart desires!

INGREDIENTS

  • 1 tsp of sesame oil
  • 1 tbsp oyster sauce
  • 1/4 tsp grated ginger (I sometimes use more but ginger can be overpowering so just be cautious)
  • 1 tsp sambal
  • 1 cup of shrimp (or any protein you like)
  • 6-10 dashes of fish sauce
  • 1 cup of Trader Joe’s vegetable fried rice (on regular carb days I do 2 cups of this and no cauliflower rice)
  • 1 cup of cauliflower rice (can also use the cauliflower vegetable stir fry as well!)
  • Toppings – cilantro, lime wedges, more hot sauce!
  • 1 egg (optional)

METHOD

  1. Heat a large skillet over medium/high heat and heat up your sesame oil
  2. Add in your rices, garlic, ginger, fish sauce, oyster sauce and sambal
  3. Saute for a couple minutes
  4. Push rice to the sides of pan and add in your shrimp. Cook until pink
  5. Crack one egg into the pan and begin to scramble it. Once it starts to cook begin incorporating your rice into the egg.
  6. Serve and enjoy!

This looks good and I love that it’s so easy to make. I am a fan! I need to try cauliflower rice. How does that change the flavor, if it does?

When you do half and half you don’t notice it really! If it’s all cauliflower rice it’s definitely got a cauliflower flavor.
