Lavender Honey Latte

This summer has been all about the iced latte and iced coffee. So why not spruce it up a little and infuse your caffeine fix with a little lavender? It’s a beautiful flavor that’s a little floral and has a hint of mint and earthy rosemary. Did you know it’s related to those two plants? I had no idea until I Googled! Making a simple lavender syrup for your morning cup of coffee or latte is super easy and elevates your morning cup of joe.

How To Make Lavender Simple Syrup

To make this lavender simple syrup you do need to make sure you order the right lavender. You can’t just pick up lavender from the flower section of Trader Joe’s unfortunately. Although that’s great to have in a vase around your home, smells heavenly. But you do need to buy culinary lavender. I picked mine up on Amazon but some specialty grocery stores have it as well.


  • 1 cup of sugar
  • 1 cup of water
  • 2-3 tbsp culinary lavender


In a small saucepan over medium heat, combine sugar, water and lavender. Bring to a simmer for 5 minutes. Let cool slightly and strain it through a fine mesh strainer. Let it cool before putting in the fridge. Lasts up to two weeks in the fridge. You can also make this a honey lavender syrup instead of adding the honey AND the syrup to a latte. Just add a few tablespoons to your syrup while still warm.

How To Make A Honey Lavender Latte


  • 1 shot of espresso
  • 8 oz of your favorite milk (I used A2 milk for these since I have a slight milk intolerance)
  • 1-2 tbsp of lavender syrup
  • 1 tsp honey
  • Coffee ice cubes – not required but worth the effort.

Combine all ingredients to a glass and enjoy!

TIP: Making coffee ice cubes is super easy and worth the effort. Just brew a big cup of coffee and place it into an ice cube tray. You can sweeten it if you want before pouring too if that’s your thing. Great in all your iced coffees or iced lattes so you don’t dilute your drink.
