I’ve never been one to really love a piña colada. They’re overly sweet and always give me a stomach ache. To be honest, I’m just not really into frozen drinks for some reason. Although, one time in Chicago, we went to Parson’s where I had the most amazing slushies. They were to die for and literally put you on the floor. In any case, it’s rare I find a frozen drink I love. So this is my version that’s a lot lighter, and won’t make you feel ill. Plus, who doesn’t love a drink in a copper pineapple?
What makes this one nice and light is I use coconut milk and fresh pineapple and serve it over crushed ice. If you want to go for a more blended feel, just pop it into your blender. By eliminating those yucky mixes in the liquor store and using real ingredients, it makes a huge difference.

- 4 ounces dark rum
- 4 ounces coconut milk
- 2 ounces of pineapple juice
- Add all ingredients to a punch bowl and mix.
